A quick and perfect recipe for the autumn and winter seasons, this hot vegetable dish is guaranteed to make your tummy very happy, satiated, but not overly stuffed. This is my favourite way to cook a huge variety of vegetables, and they taste like heaven. I promise.
And, it’s also the best way to finish up some vegetables that are about to go bad. You can add in any vegetables you have, but these go really well together.
Mama’s Veggies in the Oven
(Servings 4)
Ingredients
1 long white radish
3 large zucchini, 5 small zucchini
4 carrots
2 cups of large pumpkin pieces, skinned
1 whole cauliflower
2 large eggplants
4 big onions
3 big cloves of garlic
¼ cup orange juice
½ cup lemon juice
1 cup vegetable stock
2 tbsp olive oil
Directions
Prep oven to 200 degrees Celsius/ 400 degrees Fahrenheit
Mash the garlic and mix it with the orange juice, lemon juice, stock, and olive oil, adding in some salt.
Chop all the veggies into large pieces, and place the veggies in a deep-set pan. Pour the sauce on top of them, and throw the pan into the oven for 30-40 minutes.
Enjoy alone or with a side of steamed jasmine rice!
