The best way to cool down in the summer is with icy and refreshing treats. You could go for an ice cream cone, a milkshake, or a cup of summer snow, but the best option is homemade popsicles.
What I like about making popsicles at home is that I know exactly what I’m putting in them. I can control the amount of sugar and the flavors. If you want a creamy and indulgent popsicle, you can pick a flavor, some add ins, and mix it with Cool Whip. If you want something healthier, you can use fruit and yogurt. Or you can go super healthy and use fruit purees or juices.
These Blueberry Lemonade Popsicles combine some of the best flavors of the summer: blueberry and lemon. The recipe below has instructions for homemade lemonade and a homemade blueberry juice. The latter requires a little bit of stovetop time, but it’s not super involved. You just have to let the blueberries simmer in a pot for a few minutes and wait for it all to cool.
The popsicles in the photos were made with a popsicle mold, but paper or plastic cups work just as well. Just remember that the size vessels you use will determine how many popsicles the recipe will make.
There is some sugar in this recipe, so these popsicles aren’t completely guilt-free, but you can adjust the sugar according to your personal preference.
